Another famous dish from the Latium region, Amatriciana sauce is made from pork cheek sautéed in extra virgin olive oil and simmered with dry white wine, tomato sauce and a pinch of salt. “Gricia” sauce is considered to be the forerunner of Amatriciana sauce, since it is very similar but without the tomato. There is an original recipe which has been made official by the town of Amatrice, however there are now different versions of the recipe in different areas. We have developed a recipe similar to that which is best known in Italy and abroad, using the highest quality ingredients. We use the finest tomatoes from Emilia-Romagna, with the addition of other high-quality ingredients such as 100% Italian extra-virgin olive oil and Cervia sea salt, to allow you to serve up tasty pasta dishes with personality.

 

Way of use:

For best results, eat Amatriciana sauce with La Dispensa di Amerigo pasta, made with durum wheat semolina. Bucatini or Spaghetti are the most widely used pastas. Cook the pasta in plenty of salted water. While the pasta is cooking, pour the contents of the jar of sauce into a frying pan and warm it over a low heat. Add the pasta, stir and serve. Crumble over some crispy fried pork cheek to add a final touch before serving.

tomato pulp, 29% matured cheeks (pork, salt, spices, natural flavors, preservative: potassium nitrate), peeled tomatoes, tomato paste, extra virgin olive oil, golden onion, Cervia salt, chilli pepper.
